Crohn’s and Food
What do you eat after being diagnosed with Crohn’s disease? That is a question I hear most when asked about my eating habits. My age was 33 and I had just had a baby girl and a very violent and traumatic separation from a common law partner of less than 2 years. Food was an enemy of my body and I couldn’t find anything in shopping stores or food vendors to keep myself from the most excruciating pain with every bowel movement!
Then I was forced to try the elimination diet, whereby everything that I formally ate is eliminated and you slowly introduce ONE food item at a time, in a pseudo mono diet beginning with brown rice and for protein boiled chicken breasts (no Spice)! This temporarily saved my life, but I had NO IDEA what was causing the inflammation or the in ability to stomach any food from a Grocery Store!
It took me the following education in Toronto to decipher the true culprits of immune system shutdown , first a two year bout with chemical engineering at Seneca College to analyze water that I swim in ingest and cook with. Second a two year course in Naturopathic Nutrition with a partner who achieved a graduate certificate, again in order to further understand the relationship between food and health from a full spectrum of alternative health sciences. Then finally a partner finishing her Doctorate in Traditional Chinese Medicine, whereby I assisted in herbalism and acupuncture therapies and education.
It is now almost 25 years since my first days of post bowel resection from Mt Sinai Hospital and a complete lifestyle change and I have had no symptoms ever since I made the conscious choice to eat a more balanced and organic diet of mostly vegetables and greens with juicing smoothies and grains being my primary diet.
I’m the “Blackened” part of Blackened Ginger and my story is about an organic farm kid who ended up seeing the ugliest side of the restaurant and food production industry, by working in kitchens run by untrained and unskilled staff. Overworked and underpaid in vegan and vegetarian eateries that are literally poisoning people on a daily basis, and otherwise health conscious consumers are becoming ill for reasons they can’t explain. I can show pictures of pots and utensils that have no business ever being used in food production. I can testify to cooks serving food that should never have been consumed . I will from now on let the public know - beware of the slogan “I work here ,I don’t eat here”!!!
